I don't know the about the rest of the world but its been increadibly hot and humid in New Zealand and Australia as of late. The humidity levels at our house have been almost unbearable and, aside from swimming, anything outside of the air conditioning is a chore.
The escalating summer temperatures mean we've been living off gallons of this refreshing herbal iced tea, inspired by the tea we tried on our little Byron trip. It's one of the simplest drinks to make and its packed with invigorating peppermint and local zesty limes, I have it sugar free but if you want a boost of sweetness I recommend a dollop of honey mixed in.
3 bags of peppermint tea
1 stalk of lemongrass
Get a large bowl, fill it with 1 litre of boiling temperature water, tea bags, and lemongrass. Leaving to steep for 10-20 minutes. Pour into a 1.5 litre sized jug and add in sliced limes, mixing in honey if wanted and topping up with water if needed. Place in the fridge until cold and serve on ice. Enjoy!
