It's interesting watching from the southern hemisphere as our Northern counterparts post an onslaught of toasty porridges and cooked breakfasts on social media during their cold, icy holiday season when all I want to do is sit in a bucket of ice and eat cold, fresh fruit and smoothies. This recipe is my 'response' to the warm oatmeal landslide, its a cool and refreshing way to kick off the day in our summery southern hemisphere countries...
Ingredients (serves one large bowl)
1 large frozen banana
1 teaspoon cinnamon
3/4 cup rice milk
2-3 tablespoons chia seeds
1 tablespoon coconut yoghurt
1/6-1/4 Paw Paw
Muesli (I use gluten free clusters)
Put all the Smoothie Mix ingredients (including chia seeds) into a high power blender and blend until thick and smooth. Place in a bowl and top with bite sized pieces of mango and paw paw and sprinkle with Muesli. Enjoy!
